Go To Cupcakes






 
So, you know how you have your 'go to outfit,' 'go to person,' etc.?  I'm looking for my 'go to' cupcake recipes.  The basics - chocolate, vanilla, yellow, red velvet, etc.  Today, I attempted yellow cake and fudge frosting.  The recipe was solid.  Needs a little tweaking on the timing.  Sour cream helped make it moist.  The frosting was excellent!  Loved the cocoa taste. 
Lessons learned:  room temperature butter is very soft, only takes about one minute to cream.  My ice cream scoop is the perfect size for level cupcakes.  Don't add extra batter or they will muffin top.  I don't like them to muffin top (just like I don't like my jeans to muffin top!).  And, oh yeah, I do not like foil cupcake - stay with the paper liners.
Anyway, there is nothing better than baking cupcakes and giving them away!  Tonight I took them to Cordiano Winery.  We had a lovely evening on their patio enjoying wine, salad, and pizza.  Tom and I each had a cupcake for dessert and left half a dozen for the Cordiano family.
